Đuôi heo ngâm mắm với thịt đuôi heo giòn sần sật, ngấm đều vị mằn mặn, chua ngọt, cay cay rất hấp dẫn. Đây là món ăn đơn giản không tốn nhiều thời gian của chị em đâu nha.
Dùng dao cạo sạch đuôi heo, nhổ hết lông nếu có sau xát kỹ đuôi heo với 1 muỗng canh giấm, 1 muỗng canh muối cho hết mùi hôi rồi rửa sạch. Chặt đuôi heo thành các khúc vừa ăn.
Hành tây cắt miếng to; gừng thái lát mỏng; 1 cây sả đập dập thái khúc, cây sả còn lại đem thái lát mỏng; ớt sừng thái lát mỏng. Trong tô lớn trộn đều 100ml nước mắm, 60ml giấm gạo, 60g đường, 50ml nước đun sôi để nguội. Tiếp theo cho sả thái lát, ớt, tiêu sọ, bột ớt và khuấy đều nguyên liệu.
Đun sôi nồi nước, cho gừng, sả đập dập, hành tây, 1 muỗng canh bột canh vào nồi sau đó mới cho đuôi heo vào cùng. Luộc cho tới khi đuôi heo chín là được. Sau đó, vớt đuôi heo cho vào tô nước đá lạnh, ngâm 10 phút cho nguội hoàn toàn rồi vớt ra để ráo nước.
Cho đuôi heo vào hộp thủy tinh có nắp đậy, đổ tô nước mắm sả đã pha vào cùng, đậy nắp và ngâm 1 ngày là có thể thưởng thức.
Đuôi heo ngâm mắm ngấm đều vị mằn mặn, chua ngọt, cay cay ngon miệng. Món này làm mồi nhậu thì tuyệt vời ông mặt trời luôn nha!
